Beef Tartare
22With sun-dried tomato, almonds and king oyster mushroom carpaccio
The land, raw.The bavette, with fries
Via Cagliari 5, at the foot of the Basilica of San Paolo · every evening from 6:30 pm, in season
Why
The sea leads the kitchen, but the bavette passes through the same hands as the raw seafood.
Not everyone at the table orders the same thing. Some come for the raw seafood, some leave the fish to the others.
That is why the meat at Kombo is limited, and thought through. The tartare with almonds and king oyster mushrooms. The bavette with grapes. The suckling pig porchetta, which meets the amberjack.
And the malloreddos al ragù, cooked slowly, with pecorino cream.
