Our idea of cooking

Start from what you know, and take it somewhere new

Kombo Street sits in the heart of Olbia, away from its noise. In the kitchen, local produce — fish from the gulf, seasonal vegetables, pecorino — meets contemporary technique and a very concrete kind of creativity. Every dish is recognisable. Never predictable.

The kitchen

Three things to know before you sit down

The catch comes first

Olbia mussels, raw scampi and prawns, the day's catch baked in the oven. The starting point is this sea, following the rhythm of the seasons.

The interpretation

Carbonara turns to tuna, culurgiones meet octopus and chimichurri. It isn't experimentation for its own sake: it's tradition, taken somewhere new.

The open kitchen

From your table you watch the hands plating, the embers at work, the room in motion. The experience is more than the dish: it's service, rhythm, perception.

The chef

Anna Greguoldo

Trained in Michelin-starred kitchens, Anna leads Kombo Street with one clear idea: you don't perform a territory, you interpret it. From the mussel cappuccino to the tuna carbonara, every dish starts from a Sardinian memory and lands where you least expect it.

Cocktails & cellar

From aperitivo to after dinner, the care never changes

The bar follows the kitchen's idea: international classics made with precision and house signatures, alongside a cellar built around the menu and a selection of more than 60 gins. The glass opens the evening, keeps it company, and closes it.
